Hello January 2017!

Happy NEW YEAR!!!! 2017! Whew! That went by fast! Literally feel like I was just chanting my graduation year “0-2! 0-2! 0-0-0-0-00000-2!” at my high school’s basketball games! Wow. Ok anyways, back to the New Year!

2016 was a really great year with so many spectacular memories, so I hope we just keep that cruising right into this year! We have so much to look forward to already in January, it’s sure to be a sensational year! (PS – I heard that word sensational on Good Morning America this morning and I realized I never use that word, so it’s been in my head to use it! Tell me that happens to you sometimes too… right??) Here’s my top things to do in January. Can’t wait for all of them!!


| New Calendar and Planner |
If you know me at all, you’ll know I’m a stationery FREAK. OBSESSED. I love cards, notepads, planners, calendars, all of it. I get reaaaally excited each month just to turn over the page on the calendar (#itsthelittlethings), so breaking out a WHOLE NEW CALENDAR is ultra fun for me! I love Rifle Paper Company everything, their florals are absolutely beautiful and cheerful. I get their appointment calendar because I love how large it is to fill  It looks so very pretty on the wall also.

For a planner, I love the 1Canoe2 planners. They’re a little more funky/pretty and I love how this one goes week by week with very large spaces any no lines to fill in daily details. I’ve had it for a couple months now and am LOVING it. So easy and fun to use.


| Barre3 All In | 
Starting January 9th, Barre3 is starting a 4 week program called Barre3 All In to supercharge your body and mind. It sounds SO AWESOME. You follow the Barre3 All In digital handbook that includes a plan to workout 5 times a week, a guided meal plan with foods that look sensation (there’s that word again), and access to wellness experts as well as the online community. There are tons of videos online so if you’re can’t make it into the studio 5 times, you can complete the workouts in your very own home. I love goals and following programs, so this is right up my alley! I’m excited to get stronger, healthier, and feel more energized at the beginning of the New Year! | Gender Reveal!|
I REALLY love to know the gender. I think it’s a fun midway surprise and I’m way too much of a planner to wait until the end! I just really like to know what’s growing inside of me :) And I struggle enough thinking of one gender’s name, let alone TWO! So nice to eliminate one hurdle in my life. We find out on January 10th! I am so excited to see the lil baby and to know that (hopefully) everything is growing right and well and baby is healthy and A-OK. With Ivy, we found out right in the ultrasound room, with Leo, we brought a card home and opened it with just John and I and then family (see here), and this time, I think John and I will make a date out of it and open it on a nice dinner date that night and celebrate our healthy baby girl our boy.

| San Diego|
Last year, John and I took our yearly trip to the Bahamas, which was SOOO INCREDIBLE. The sand was unbelieveable and ahhh, I’m reminiscing and falling into dreamland again. So, this year, we were trying to think of something to do again, but with being pregnant and the Zika threat, I was a little scared to go anywhere out of the country. We decided on San Diego and I couldn’t be more excited!! We are bringing the kids with us since we wanted to make it a longer trip so we plan on having a ton of fun and hopefully some relaxation in there as well.

We chose the Omni La Costa and it looks so fabulous and family friendly. An entire family swimming area with slides and a sandy edge, plus the Kids Club so John and I can get a few hours to ourselves in the adults only edge pool or on a date at one of the fine restaurants. It looks so perfect for a family, I’m really anxious to spend a week there at the end of January!

And you can’t go to SoCal without seeing Disneyland! I realized we are only an hour away from there, so you better believe I convinced John that we WILL be going there for a day :) Ivy won’t even know what to do with herself! And I’m ready to soak in all of the Disney Magic!

Add in Sea World and the San Diego Zoo each a day, then the rest just hang out and relax by the pool, means it should hit all of our vacation needs :) So excited for this trip


| Colorado |
Call us crazy, but we are heading straight from San Diego to Colorado! Temperature whiplash! John’s uncle lives in Ridgway, Colorado and has invited the Koch family out for a few days to stay and vacation. I am so excited to go to the Ouray Hot Springs and see Telluride again, I love mountain villages! I unfortunately won’t be skiing due to baby belly, but I still love to ride the gondola and see the ski mountain while gazing at the majestic mountains!


Whew! That makes for a busy January! Really ringing in the New Year right! Lots going on already! Wouldn’t have it any other way to make winter go by AS FAST AS POSSIBLE. Hate the cold!

A Day at the Apple Orchard!

What a gorgeous fall day it was today! I’m not ready to give up these 60’s and wear an actual coat yet, so give me all the cardigans and sweaters for a little while longer paaaalease! Today we enjoyed the beautiful weather and headed to the apple orchard to go to the Pumpkin Festival. I love these festivals with all of the rides, animals, cotton candy (FAVE), and of course the best parts, the pumpkins and apples! Ivy and Leo were so cute searching for their pumpkins and I think Leo had an apple in his hand THE ENTIRE TIME :) Adorable!

And I just have to add this in here too because Ivy and I went to the Princess Ball today and OH MY GOSH. I think I teared up a few times with how cute she was hugging the princesses!!! img_8259

Ivy’s Mermaid Inspired 3rd Birthday!

Ivy turned THREE last weekend! I can’t believe our first born is THREE! Whew! We had a such a fun weekend throwing her a little party and celebrating our newly three year old!

She is totally into Ariel and Little Mermaid (also my FAVORITE Disney movie!!!) lately so she had asked for a mermaid party. I couldn’t wait to throw her an Under the Sea party with mermaids, sea creatures, and lots of blue and purple! Most of all, I couldn’t WAIT for her to dress like a mermaid in her surprise outfit from Carken Design! She was sooooo adorable in it and wore it ALL DAY LONG. Loved it! And almost all of her girlfriends showed up in mermaid costumes too, it was SO FREAKING CUTE!

I was really excited about this theme because there are so many great ideas out there and who doesn’t love mermaids?! I knew I wanted an arch like this birthday party had, and thankfully, Queen City Balloon Bar reached out to me and wanted to make it for me! He did AMAZING and it turned out so great! Ivy couldn’t believe her eyes when she came downstairs in the morning! The arch was the main centerpiece for the party and I really didn’t need much else for decorations after that. Just some good food to fill the table!

I decided to make Pioneer Woman’s chicken salad and it was SUCH A DELICIOUS RECIPE. Some chicken salads are so mayonnaisy, but this one was equal parts mayonnaise, sour cream, and half and half, which made it so good! I bought a star shaped cookie cutter to turn them into starfish chicken salad sandwiches. Super cute! I made shells and cheese for the kids, and we had some salads and chips and dips too. For desserts, we had seaweed (sour belts), gummy sharks, and cupcakes with mermaid fins on them made of ice cream cones and mermaid fin cupcake toppers! Loved those! So with the theme! I just cut a little bit of the top of end of the cone to fit part of the fin down there. Easy! And can’t forget about the most delicious cakes in Sioux Falls! From Sugar’s Baked Goods and Sweet Treats, plain vanilla with vanilla buttercream frosting, mmmm mmmmm. Overall, everything was delicious!

We put together some goodie bags for the kids to use during the party and they turned out so cute! I went pretty generic and did the Little Mermaid surplus with lots of fun toys and girly items like necklaces, bracelets, and hair bows to wear!

And the invitations were equally as perfect!!! And you could choose between a blond haired mermaid, red haired mermaid, or a brunette mermaid! Cute!

For the craft during the party, I found this fun and easy “Ocean in a bottle” activity on Pinterest, but totally amped it up! I bought sea creatures and big seashells and mini seashells for the kids to add to their bottles, and I had leftover glitter from Ivy’s party last year, so we added that in there as well!  The kids had so much fun making theirs and it was super easy for everyone to do! And thank goodness the mess was outside! :)

At the very end of the party, we surprised her with a motorized Jeep! She freaked and has basically been in it ever since, running into EVERYTHING! Hopefully she gets the hang of it eventually! Leo’s too scared to ride with her! :) Haha!

Farm-to-Fork Dinner with Hungry for Truth SD

Farm to fork dinner Hungry for Truth SD

I LOVE food. Especially summer food! Fresh food, farmer’s markets, growing your own garden, summer is a really special time for food. Something about picking that rosemary and kale right from my back yard is so exciting! I was invited to a Farm-to-Fork dinner last Thursday and it was so spectacular! The evening was absolutely gorgeous, the food was incredible (and fresh!), and the company made the night flow like the pinot I was sippin’ on. So anxious to share this event with you!

Hungry for Truth South Dakota, is new initiative started by South Dakota Soybean designed to open discussions about food between South Dakotans and the farmers who grow it. They invite people to talk with the farmers directly about any questions you have about food and/or farming. They also allow for the farmers to share their stories about their farm and the care, hard work, and pride they put into growing their food to make it healthy for your family.

And that’s where this event comes in! The farmers and locals got to enjoy a marvelous evening together while we heard their stories and I drilled them with questions! Ha! Getting to sit next to these farmers that produce our food is pretty spectacular. Listening to them tell me what they’re doing to ensure our food is healthy, free of harmful chemicals, additives or antibiotics, while gathering more knowledge about food and farming and knowing that the food I eat is really coming from a South Dakota farmer is pretty awesome! I just think that is so neat! I love supporting our farmers and this Farm-to-Fork dinner was so inspiring!

Sarah Jo, who helps coordinate the Hungry for Truth initiative, is a friend and fellow blogger (see her DakotaChic blog here!!), and she is currently on the cover of the Sioux Falls Woman magazine! She had the vision behind this event and it turned out SO amazing! It was on the Thompson’s farm near Colton, SD and the home and farm and land were sooo beautiful! Something about being out in the country on an old dirt road. The decor spread out across their front lawn and it was like out of a movie! The tables were so gorgeous! I was obsessed with all the eucalyptus leaves, which is my current favorite for home decor! It was so lovely and so tastefully done.

Now on to the food! What I love about these events, is that I am getting to eat food that came STRAIGHT from a farmer who I am sitting at a table with! Getting to discuss with them about their food, what they do, and how the whole farming process works is so intriguing. I sat next to a farmer from Mitchell, Peggy Greenway, and she has 5000 pigs! She considered herself a small to medium farmer, and I couldn’t believe that! 5000 pigs! She has one full-time employee who helps with the daily tasks, but otherwise, it is completely family run! She provided the bacon for the dinner that was on the wedge salad and caramelized bacon for the ice cream sundaes, SO FREAKING GOOD. I loved hearing her talk about how pigs can get sick just like humans and how sometimes they need antibiotics or extra TLC. She went on to explain that her pigs are COMPLETELY antibiotic free though by the time they are sent to be slaughtered. Peggy values health and no additives in her pigs, so she is passionate about ensuring her pigs are healthy and free of anything but juicy delicious meat at the end! The way those pigs are treated at her farm, it’s like a spa day every day for them! Peggy has such pride in her food and pigs, I love that. She sells to a company that sells to Costco, so it’s pretty awesome that next time I buy a pork product there, it might be from one of her pigs!

Here was the menu! I made sure to try everything and wowza, these farmers are the real deal! My favorites were the beef bulgogi, the grilled chimichurri pork tenderloin, and OF course the caramelized bacon on the ice cream! Chef Jeni was the chef for the meal and really did an incredible job. Everything was so delicious and each food item came straight from a local farmer! SO COOL!

Overall, this event was perfect. So enjoyable to be able to discuss anything and learn from local farmers. Which is exactly what Hungry for Truth SD is trying to push! I loved this quote from farmer Jerry, he said “Always leave the land better than you found it. We have a whole world to feed.” That really hit home! These farmers have SO much pride and hard work put into their farms, all to FEED US! Makes me extra thankful for them (gotta feed our families!!) and inspires me to be more knowledgeable about foods and where they come from. I love to wonder about where those veggies or meat products came from and all of the work that was put into it when I pull them off the shelf. Thinking of the whole process to get that into my hands is pretty miraculous.

Thank you farmers for all of your dedication and hard work to feed us! You are so appreciated! And thank you to Hungry for Truth SD and SD Soybean. I am so thankful to be a part of this!
